Maid

A maid (メイド) refers to any being that is hired to serve a household. Duties include attending to the occupants of the house, preparing food for owners and guests alike, cleaning and maintaining the house and surrounding property, and they are usually dressed in a French maid uniform.

Maids in Touhou

According to ZUN, a maid is "a 'mythical being' that all of us have heard about, but have never seen". In Gensokyo, most of the maids seem to act as bodyguards against intruders to protect their mistresses.
